Pumpkin Spice Bread Recipe

I am a person who absolutely loves bread, especially homemade breads such as zucchini bread, banana & pumpkin bread! Yum!! Especially the smell of your kitchen while they are baking. So, I just love the fall as it’s definitely the season for baking these yummy goodies!

I wanted to share with you a recipe I received from my mentor mom at MOPS a few years ago. It’s for a delicious, moist Pumpkin Spice bread! I have to tell you that this was seriously some of the best pumpkin bread I’ve had – so incredibly moist & tasty!! It is perfect to make as full size loaves, or also makes great pumpkin spice mini loaves that you can gift to others, or freeze and bring out as you want to eat them throughout the season.

How to Make This Pumpkin Spice Bread Recipe:

This recipe makes two regular sized loaves of bread or 6 – 8 pumpkin spice mini loaves (or more, depending on the size).

Ingredients:

  • 3 ½ cups flour
  • 2 tsp baking soda
  • 1 ½ tsp salt
  • 2 tsp cinnamon
  • 2 tsp freshly grated nutmeg
  • 3 cups sugar
  • 4 eggs
  • 2 cups fresh pumpkin puree (or canned pumpkin)
  • ½ cup water
  • 1 tbsp pure vanilla extract
  • 1 cup vegetable oil
  • 1 cup chopped roasted pecans

Directions:

Preheat the oven to 350 degrees (325 degrees for mini loaf pans) and heavily grease your loaf pans. Combine flour, soda, salt, cinnamon, nutmeg and sugar in a large mixing bowl. In a medium bowl beat the eggs. Then add in the water, vanilla, oil & pumpkin puree & mix.

{Make sure to enlist some help – kids love helping with these yummy baked goods, especially if they are going to be making for the neighbors or their teachers.}

Add the roasted pecans (we’re not fans of nuts in our breads, so we leave those out, but it does give it a nice flavor). Pour into the prepared loaf pans.

Bake for 1 hour (40 minutes or until firm for the mini loaf pans).Place the pans on a rack and let cool for 10 minutes. Remove the bread from the pan and let cool on a rack until at room temperature.

The bread seasons best if chilled overnight and then served at room temperature the next day. Although I always love eating it warm, fresh out of the oven, too!

Gift Ideas:

As I mentioned earlier, I first tried this recipe when my MOPS mentor mom gifted the ladies at my table with this yummy bread. This was such a fun gift for all of us ladies, as she found these adorable, seasonal mini loaf ceramic pans for $1 at Michael’s with a fun, fall theme – to make the perfect pumpkin spice mini loaves! She then packaged up the pumpkin bread with a pretty ribbon and attached the recipe which she’d printed out! She said they also offer these during other seasons as well, so I thought this was such a perfect little, frugal gift idea!

We enjoy passing out goodies to our neighbors at Christmastime – we find it’s a great way to reach out to them and get to know them a little better. And I thought this was a fun idea to bake them a small loaf of bread (pumpkin, zucchini, banana, friendship bread & more) and deliver it in a cute little mini loaf dish that they can keep!

This would also make a nice gift to give at a gathering, bring as a thank-you gift for the hostess of a get-together, or give at Thanksgivingwith friends or family. It is a frugal gift as these little dishes are only $1 (you could also look for a larger dish if you wanted to make something bigger), add the bag, ribbon, and homemade bread and you have an inexpensive but meaningful gift!!

If you’d like to make the mini loaves much quicker, check out this mini loaf pan which can bake 8 loaves at a time. That’s a way to crank out a bunch of mini loaves for gift ideas.

Another fun idea – a friend gave me a small pumpkin & attached the pumpkin bread recipe on a little card to the pumpkin. They could then use the pumpkin to make the pumpkin bread! My Secret Sister attached a cute little hand-crafted card with the recipe on the back! Such a fun gift to receive – perfect for this time of year!

FAQs

Why does my pumpkin bread have no flavor? ›

That means—don't leave out the salt, don't cut the amount of sugar, and use the specified amount of cinnamon. This is important because flour is what I like to call a “flavor thief”— it sucks the flavor out of ingredients. So, if you don't follow the recipe as specified, you risk a bland tasting pumpkin bread.

Why is my pumpkin bread not moist? ›

Mix your ingredients until they are just combined — you should still have some lumps in the batter. Dry bread: Dry pumpkin bread is such a disappointment. To avoid dry, crumbly bread, try to keep your batter moist. Either do this by using less flour or adding more liquid — but don't add more oil.

Is there a difference between pumpkin pie spice and pumpkin spice? ›

Pumpkin pie spice is the same as pumpkin spice, just under different labeling. These two are interchangeable and feature the same base ingredients. The ratio of the ingredients may vary slightly from brand to brand.

Is ground allspice the same as pumpkin spice? ›

Allspice is a warm and cozy spice that tastes like a combination of cinnamon, nutmeg, and cloves, but pumpkin pie spice is a bit more robust and flavorful with all those spices plus ginger. Allspice alone, while delicious, won't give you that signature pumpkin spice flavor.

How do you enhance pumpkin flavor? ›

Pumpkin is a versatile ingredient that pairs well with both sweet and savory flavors. To complement pumpkin with sweet flavor pairings, consider using spices like nutmeg, cinnamon, allspice and vanilla, or sweet ingredients like chocolate, maple, honey, cranberries or brown sugar.

What happens if you put too much pumpkin in pumpkin bread? ›

You might think you could overcome the lack of flavor by adding more pumpkin purée to your recipe, but you'd be mistaken: By the time you've added enough purée to taste it, your baked good would have a soggy texture on account of all that moisture.

What is the secret to moist bread? ›

Add Milk

To make your bread soft and fluffy, another trick used by commercial bakers is replacing water with milk. Milk has fats which make bread softer.

Why did my pumpkin bread turn out dense? ›

Pumpkin bread can become dense if there is not enough hydration or wet ingredients in the recipe. Another cause is overcooking the bread which can cause it to dry out. Remember, it's always easy to keep cooking if it isn't done but impossible to take cooking time back.

Why is my pumpkin bread still raw in the middle? ›

When the toothpick comes out clean, the bread is done. If not, bake 5-10 minutes longer and recheck. PRO-Tip: Do not pull the loaves out without doing a toothpick check. If you remove the loaf too early, the middle will be raw.

What is the closest flavor to pumpkin spice? ›

My favorite substitution for pumpkin pie spice is cinnamon, anise, and cloves. It tastes kind of different (a tiny kick of black licorice taste), but it's easier on the stomach if you're sensitive.

Can you use mixed spice instead of pumpkin spice? ›

Our answer. Nigella's Chocolate Fruit Cake (from Feast and on the Nigella website) uses pumpkin pie spice in the US version of the recipe (you may have the US version of the book) and mixed spice in the UK version. They are both a mixture of spices and are interchangeable. So mixed spice is perfect for the cake recipe.

What can you use instead of allspice berries? ›

“I'd recommend a mixture of four parts ground cinnamon, one part ground cloves, one part nutmeg,” says CarlyFarine. Mix the three spices together and measure out as much allspice as your recipe calls for.

What is a good substitute for pimento seeds? ›

Spanish Paprika and Cayenne Pepper: Use 3/4 teaspoon of a mild Spanish paprika and about 1/8 teaspoon of cayenne pepper for each teaspoon Piment d'Espelette called for. Taste and add more cayenne if you wish.

Is pumpkin spice just cinnamon? ›

Pumpkin spice (a.k.a. pumpkin pie spice) is an aromatic blend of cinnamon, nutmeg, cloves, and ginger. Sometimes allspice is included. You can buy the spice blend at the store or use ingredients you already have on hand to make DIY pumpkin spice.

What is a substitute for 1 teaspoon of allspice? ›

While allspice is a spice on its own, not a blend, it's very easy to create a similar-tasting mixture with spices you already have in your kitchen. Whisk 3½ teaspoons ground cinnamon, 1¼ teaspoons ground nutmeg and a pinch of ground cloves, then use as a 1:1 replacement for ground allspice in a recipe.

Why does my homemade bread have no flavor? ›

Your bland bread could be the result of rushing the process. Try a slow overnight rise in the refrigerator. Plan ahead to proof your loaf overnight. This hands-off time in the icebox will slow the fermentation process in your dough and result in a complex-flavored loaf.

Why does my pumpkin pie taste bland? ›

Q: My pumpkin pie doesn't taste much like pumpkin. Why not? First off, make sure you're using the right kind of pumpkin! Look for pumpkins labeled "sugar pumpkin" or "baking pumpkin." The pumpkins typically used for jack-o'-lanterns are stringy, watery, and bland.

Why is my pumpkin bland? ›

If you attempted to make homemade pumpkin puree from a regular field pumpkin that you would use to carve a jack-o-lantern for Halloween, the result would be stringy, watery, and bland. Instead, use pie pumpkins or sugar pumpkins for the best flavor and texture in any sweet or savory recipe.

How do you get pumpkin flavor? ›

"Ironically, there's no actual pumpkin in pumpkin flavoring," says Anne Cundiff, a registered dietitian in Des Moines. "It's actually a blend of cinnamon, nutmeg, ginger, allspice and cloves." Pumpkin flavoring actually harkens back to the pilgrims, Cundiff says.
